If you want to keep census info in Excel or other spreadsheet format, you might want to look at Gary Minder's website - http://www.censustools.com. If you don't have Excel (and don't want to pay the price of Microsoft Office), the worksheets do transfer over to OpenOffice. Haven't tried Numbers.
Disclosure: I have nothing to do with Gary & his worksheets except as a satisfied customer. I don't use them all. He also has some other tools included...i.e. research log.
